Easy One-Pan Chicken Veggie Sheet Pan Bake Recipe
This recipe includes chicken drumsticks, thighs, red sweet pepper, onions, broccoli, and zucchini topped with spices, and salt and pepper.
Some nights, I feel like dinner is just too difficult to put together. With a full-time business and parenting an energetic 11-year-old, I am so drained most days that stopping through a fast-food line seems like the only solution to get through it.
But, honestly, that’s a lie that I tell myself. Cooking does not need to be difficult at all. I mean, I started creating super simple recipes on Mom Spark 11 years ago for the sole purpose of helping moms like me. So, why aren’t I taking my own advice???
I am reminding myself of my love of quick and easy recipes with today’s One-Pan Chicken Veggie Sheet Pan Bake.
Chicken dinners are always a safe comfort food for kids, whether it’s a stir fry, a slow cooker meal, or in this case on a baking sheet with vegetables. It’s also super easy for mom (me). Sheet pan supper for any weeknight meal, my friends.
This recipe includes chicken drumsticks, chicken thighs, red sweet pepper, onions, broccoli, and zucchini topped with paprika, onion powder, garlic powder, oregano, and salt and pepper. You can play with the veggies according to your family’s favorites (other ideas include sweet potatoes, carrots, or russet potatoes), of course! I was thinking of possibly trying pork chops in the place of chicken, or chicken breasts. I really don’t think you can go wrong with this one.

Easy One-Pan Chicken Veggie Sheet Pan Bake Recipe
Ingredients
- 4 chicken drumsticks
- 4 chicken thighs
- 1 red sweet pepper
- 1/2 onion chopped and layers separated
- 1/3 head of broccoli bite-sized pieces
- 2 zucchini medium, chopped, skin on
- 1 tbsp oil
- 1 optional: Paprika, onion powder, garlic powder, oregano and salt and pepper
Instructions
- Preheat oven to 375.
- On a parchment lined baking dish, lay out the chicken pieces. Season with the onion, oregano, garlic, and salt and pepper.
- In a large bowl, combine all the vegetables and drizzle with the oil
- Sprinkle the veggies with a pinch salt and pepper, garlic and paprika.
- Arrange the veggies around the chicken pieces on the baking sheet.
- Roast in the oven for approximately 30 – 35 minutes or until the chicken juices run clear and has an internal temperature of 165F.
- Remove from the oven and let rest for 5 minutes.
- Serve with rice or potatoes if desired.
Sheet pan dinner that will feed the family and provide leftovers for lunch the next day. I think sheet pan recipes may be my new favorite for a quick-cooking life.
