One-Bowl Southwest Chicken Salad
This Southwest Chicken Salad is a fresh, flavorful one-bowl meal loaded with crisp veggies, creamy avocado, and vibrant southwest flair.
When life gets busy, I’m all about quick, satisfying meals that don’t skimp on flavor — and that’s exactly why I made this One-Bowl Southwest Chicken Salad.
It’s light, fresh, and packed with bold ingredients like avocado, seasoned chicken, and colorful veggies.
Plus, there’s something so comforting (and convenient!) about tossing everything into one bowl for an easy lunch or dinner that’s as nutritious as it is delicious.
If you’re a cilantro fan, that would also make a great addition to top this salad with. I kept lime wedges nearby to squirt on the salad as I ate it, too.
The best thing about this recipe? It’s basically mom-approved magic. I grabbed some pre-cooked grilled Southwest chicken (because ain’t nobody got time to grill on a weeknight), tossed it in a skillet, chopped a few veggies, and boom — dinner in one bowl, minimal dishes, and zero complaints from the kids. 🙌
Here is how to make it!
One-Bowl Southwest Chicken Salad Recipe
Ingredients
- 1 package precooked grilled & ready chicken strips
- 1 head romaine lettuce
- 1 avocado, sliced
- 1 red bell pepper, chopped or sliced
- 1 can corn, drained (fresh corn will work as well)
- 1 can black beans, drained
- 1 bag tortilla strips
- 1 bottle salad dressing, I used Italian dressing, but any dressing will work
- 1 fresh lime, cut into fours
Instructions
Cook Chicken:
- Cook the chicken strips according to the package directions. After cooking, chop chicken into cubes.
Build Salad:
- Chop and slice fresh produce ingredients (if not done already).Build salad bowl, starting with the romaine lettuce on bottom. Add remaining ingredients on top of lettuce to your liking.
Lime & Dressing:
- Squeeze fresh lime(s) on salad to taste, then top with Italian dressing.
