So, I sprayed a mini muffin pan with non-stick spray, then pressed the raw cookie dough into each cup using a cookie scoop, creating a cup form.

I then baked the cups at 350 degrees for about 5 minutes. When I removed the cups I used the back of a spoon to create a cup form once again. (the dough rises, so you have to press it back down to make the proper shape) Once the cups cooled, I filled them with melted gluten-free peanut butter chips. You could also use regular gluten-free peanut butter as well, either work!

I was quite pleased with the result and they tasted delicious. I love that I now have a yummy dessert to serve to my gluten allergic friends!

Ingredients

  • 1 tube/tub Gluten-free chocolate chip cookie dough
  • 1 bag Gluten-free peanut butter chips or peanut butter

Instructions 

  • Preheat oven to 350 degrees. Spray mini muffin tin with non-stick baking spray.
  • Press gluten-free chocolate chip cookie dough into each cup in mini muffin tin, creating a cup form.
  • Bake for 5 minutes. Remove tin from oven, then use a back of a spoon to create a cup form once again (the dough rises, so you have to press it back down to make the proper shape).
  • Once the cups are fully cooled, fill each cup with melted gluten-free peanut butter chips (follow package instructions for melting). You can also use gluten-free peanut butter as well.
