Crockpot Slow Cooker Irish Guinness Beef Stew Recipe
For St. Patrick's Day, I wanted to focus on the Irish part of the day with this rich and delicious Guinness beef stew!
Ingredients
- 2 pounds beef stew meat
- 1/4 teaspoon garlic powder
- 1/2 teaspoon freshly ground pepper divided
- 1 tablespoon olive oil
- 3 cups chopped potatoes
- 2 cups baby carrots halved
- 3 celery stalks chopped
- 5 sprigs fresh thyme
- 1 32-ounce container beef broth
- 1 11.2-ounce bottle Guinness Beer
Instructions
- Season beef with garlic pepper and 1/4 teaspoon pepper. In a large skillet brown beef in oil over medium-high heat 5 minutes or until no longer pink. Place beef in a slow cooker. Top with potatoes, carrots, celery, thyme and remaining pepper. Pour broth and beef over the top. Cover and cook on LOW for 8 hours or HIGH for 5 hours.
