Cheesy Leftover Turkey Frittata Recipe
Repurpose leftover holiday turkey by making this super easy breakfast frittata with cheese, eggs, diced peppers, and hashbrowns!
Leftovers are the BEST part of the Thanksgiving meal.
That’s right, I said it. Everyone debates whether the sides, the turkey, or the dessert is the best part of the Thanksgiving meal, but for me, it’s none of the above. The best part of the Thanksgiving meal is the leftovers. I LOVE having a turkey and stuffing sandwich the next day, but I also love all the creative things you can do with Thanksgiving leftovers.
Cheesy Leftover Turkey Frittata Recipe
This year, I did something a little different. I created a cheesy leftover turkey Frittata. I love this recipe because it uses turkey, but you can also use other items in your fridge from before and after the big day. It makes for a hearty breakfast too!
I used shredded mozzarella cheese for this recipe, but I could also see making it with shredded cheddar (mmmmm, I think I’ll that next), too.
Okay, let’s get to my recipe for Leftover Turkey Frittata!
Ingredients for Leftover Turkey Frittata
- 1/2 cup shredded mozzarella cheese
- 1 – 1 1/2 cups leftover turkey meat, shredded or diced
- 6 eggs
- 1 tbsp butter
- 3 cups spinach
- 1 clove of garlic, minced
- salt and pepper, to taste
- optional: top with a dollop of sour cream
Instructions for Cheesy Leftover Turkey Frittata
- Whisk eggs, cheese, salt, and pepper in a medium bowl.
- Over medium-high heat, heat a non-stick skillet (or spray with cooking spray). When hot, add butter. When butter is completely melted, add spinach and cook for 1 minute, then combine turkey and garlic.
- Cook for 3-4 minutes, then add egg mixture and cook for 5 minutes.
- Broil for 4 minutes or until eggs are set. Let cool and serve!
