Muffins are a powerhouse food, so today I wanted to share a bunch of yummy recipes that are pretty darn healthy.
Muffins are the ultimate, portable snack food. Whenever I make muffins, I like to make a few batches all at once — mostly to ensure that I actually get to eat a few before the kiddo and my mister eat them all up! Muffins make for a great (easy!) breakfast food — heated with a little butter, they’re awesome to take in the car if you happen to be having a late morning, they’re tasty in your kid’s lunchbox, and I like to pack up a few and send them to work with my partner so he’s less tempted to eat junk at the office.
Basically, muffins are a powerhouse food, and while some may see them as more of a treat, today I wanted to share a bunch of yummy recipes that are pretty darn healthy, low on sugar, and high on flavor! Hope you find a few recipes to try out with your family!

Since muffin recipes are all so simple — usually just a bowl or two and some mixing — they make a great recipe for kids to help make. My daughter has always been an awesome help in the kitchen and at just about 6 -years old, she can make the most simple muffin recipes on her own! With just a little help from mom with measuring and getting her creations in the over, I’ve got a tiny Martha Stewart on my hands.
