If you’ve been a reader here at Mom Spark for a while, you probably know that our slow cooker whole chicken recipe is one of our most popular.

So, with that delicious chicken in mind, I wanted to test it out in a new way with a pressure cooker or Instant Pot.

And it turned out beautiful. I did change it up a bit from my slow cooker version, but it’s not vastly different. Just made it a whole lot quicker!

Instant Pot Pressure Cooker Whole Rotisserie Chicken Recipe

Ingredients

  • 1 whole chicken thawed
  • 1 medium yellow onion cut into fourths
  • 1 head garlic cut into half
  • 3 tbsp olive oil divided
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme or 5 springs of fresh thyme
  • 1 tsp dried rosemary or 3 sprigs fresh rosemary
  • 1 tsp lemon pepper
  • 1 tsp salt
  • 1 tsp black pepper

Instructions 

  • In a small bowl, mix rosemary, thyme, paprika, and lemon pepper in a small bowl. Set aside.
  • Remove any bags of gizzards, etc. from inside of the chicken. Rub 1 tablespoon of olive oil all over chicken, then sprinkle chicken with salt and pepper on both sides.
  • Stuff chicken with onions and garlic. Set pressure cooker to “saute” for 30 minutes. When pressure cooker is ready, add remaining olive oil to pot, then place chicken inside uncovered. Flip over after 15 minutes. Remove from pot.
  • Insert metal trivet into pot, then pour in chicken stock.
  • In a large bowl, sprinkle spices you set aside on both sides of chicken. Place inside pot on trivet and lock lid on pot. Set pressure cooker on “poultry” for 25 minutes.
  • Remove from pressure and enjoy!
