Sausage, Cheese & Egg Breakfast Hash Brown Nests Recipe
This amazing breakfast recipe has savory sausage, cheddar cheese, and eggs encased in a delicious hash brown nest!
You can find a ton of articles online about how important it is to eat dinner together as a family. This activity instills good eating habits and creates family bonding time.
But the truth is eating dinner together as a family doesn’t always work. There are work schedules and evening meetings and practices to get to. A lot of those articles don’t point out that the important thing is not eating dinner together, it’s eating together. If family dinner doesn’t work for your family, consider family breakfast, lunch, or even a snack.
Sometimes we have big family breakfasts on the weekend, like pancakes, sausage, and fruit. That’s great, especially if someone else is making the breakfast and I get to sleep in – ha!. But, I also really like it when my family makes time to have breakfast together on a weekday. I think it’s important for the kids to go off to school with a feeling of connection. It’s also useful for planning purposes, as I like to check in every morning to know who needs to be where.
One way to make sure everyone gets to the table on a busy school morning or busy weekday mornings is to serve something a little more fun than your normal cold cereal and toast. My son and I really like to cook together and this easy recipe for breakfast nest muffin cups is super easy for us to do together!

Equipment for Sausage, Cheese & Egg Breakfast Hash Brown Nests Recipe
Ingredients for Easy Sausage, Cheese & Egg Breakfast Hash Brown Nests Recipe
- 1 package fully cooked breakfast sausage patties I used Jimmy Dean sausage
- 15 oz frozen shredded hash browns thawed
- 1 cup cheddar cheese shredded
- 1 tbsp cheddar cheese shredded
- 1 tbsp olive oil
- 6 medium eggs
- 1/2 tbsp parsley chopped
- salt and pepper to taste
- optional ingredients: red bell pepper, yellow onion, or green onions
Ingredients for Hash Brown Cups Recipe
- Pre-heat over to 425 degrees.
- Combine hash browns, olive oil, salt, pepper and 1 cup cheddar cheese in a large bowl.
- Spray muffin pan with cooking spray and start to shape the hash brown mixture into each pan, creating a “nest shape” for each one.
- Bake nests until the edges start to turn brown and cheese is melted, around 15 minutes or so. Remove from oven and set temperature to 350 degrees.
- Add one sausage patty into each nest, then crack on top of each patty, sprinkle 1 tbsp of cheddar cheese and parsley. Bake until eggs have set, around 15 minutes or so.
- Let cool and serve!
note: store leftovers in an airtight container in the refrigerator and heat up the next morning.
