The weather here is slowly cooling off, which has me all kinds of excited. I’ve already broken out my scarves, sweaters, boots, and my trusty Crock-Pot Slow Cooker for slow cooker recipes. I’m ready for cream soups and great hearty dish comfort food!

CROCKPOT CHICKEN AND DUMPLINGS RECIPE:

EQUIPMENT FOR CROCKPOT CHICKEN AND DUMPLINGS

INGREDIENTS FOR CROCKPOT CHICKEN AND DUMPLINGS

  • 4 chicken boneless skinless chicken breasts or boneless skinless chicken thighs
  • 2 cans cream of chicken soup (you can use one can of cream of mushroom soup if you like)
  • ½ onion, diced
  • 1 tsp garlic, minced
  • 2 c frozen peas and corn mix, thawed (you can also use other vegetables, like green beans
  • 1 ½ c chicken broth
  • 1 tsp poultry seasoning 
  • 1 tsp thyme, dried
  • salt and black pepper as desired
  • 1 can refrigerated biscuit dough (for dumpling dough), separated

INSTRUCTIONS FOR CROCKPOT CHICKEN AND DUMPLINGS

  1. Place chicken, soup, broth, onions, garlic, poultry seasoning, and thyme in the slow cooker bowl.
  2. Cook on high for between 4 – 5 hours (cook time).
  3. An hour before cooking time is complete, remove the chicken breasts and shred them.
  4. Return them to the slow cooker bowl and cover. Take HALF the biscuits and tear each one into four biscuit pieces. Add them to the chicken mixture Crockpot bowl along with the vegetables as well. Cover and let cook for the remaining hour. 
  5. Bake the remaining biscuits according to the directions on the can.
