Presenting the easiest little snack –  delicious, unexpected, and [mostly] good for you…Zucchini Chips!

Baked Salt and Pepper Zucchini Chips

Change up your snack routine and try zucchini chips, simply seasoned with salt and pepper and baked to perfection.

You need four ingredients, a few moments to slice, and one hour to bake.

Seasoning options can be modified to your personal taste – try adding smoked paprika, lemon pepper, or even some freshly grated asiago!  Have fun!

These DO reduce by nearly half their size, so keep that in mind if serving more than a couple of people, and plan to double or triple the recipe.

I honestly just enjoyed the whole batch myself. Ooops.

Baked Salt and Pepper Zucchini Chips

Ingredients

  • 2 medium zucchini sliced thin
  • olive oil abt 1 TBSP
  • freshly cracked black pepper
  • sea salt

Instructions 

  • Preheat oven to 250 degrees F.
  • Lightly grease a baking sheet or line with a Silpat or parchment paper.
  • Slice zucchini as thinly as possible and gently toss in oil.
  • Sprinkle with salt and pepper.
  • Lay pieces down without them touching each other.
  • Bake at 250 for one hour, but watch carefully to avoid burning and turn pieces halfway through.
  • Cool and enjoy immediately.
