No-Brainer Easy Cheesy Mexican Dorito Casserole Recipe
Sometimes I get a craving for the ultimate comfort food and this Mexican Dorito Casserole recipe satisfies that craving!
Every once in a while I get a certain craving for ultra comforting, delicious and easy to make food. This recipe for Mexican Dorito Casserole fits the bill.

I’m not gonna lie, it is not in any way healthy, but it isn’t the sort of thing you make regularly. For a special treat and to fulfill a craving, it certainly hits the spot.

Mexican Dorito Casserole
Ingredients
- 2 c. shredded cooked chicken
- 1 c. shredded cheese or more if you are a cheese hound
- 1 can cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 can Ro-tel tomatoes canned tomatoes with jalepenos-mild
- 1/2 packet taco seasoning or more- to taste
- Bag of doritos
Instructions
- Pre-heat oven to 350-f degrees.
- In a mixing bowl, combine all ingredients except doritos.
- In a greased 2 qt baking dish, put a layer of crushed Doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.

So any. Suggestions on a gluten free, i am unable to find gf cream of chicken?

Sprout’s has GF cream of chicken as does most Safeways
King Soopers/City Market carry GF soup too.
Unless you have celiac disease, there is no benefit to going gluten free.
Sure there is. Not as a diet though. Try going off gluten for a month (not necessarily substituting gluten free products). You will notice a difference in your thought process. Gluten clouds your brain. I didn’t get this from reading any book, but from doing it and from people I know that don’t ingest gluten. Good book to read is Grain Brain.
Pacific organic has gluten free cream of mushroom & cream of chicken soups. A family member has celiac disease. We have found these soups work well in recipes 🙂

This was delicious! Â I changed mine up a bit for the picky eater in out house. Â I put the raw chicken, taco seasoning, chicken soup, cream cheese (instead of sour cream) and used salsa since it was on hand in the crockpot for about 4-5 hours on low. Â Didn’t use milk. Added the cheese and layered it with the Doritos. Â Cooked for about 15 mins and added lettuce, tomato and olives on top after. Â Was a HUGE hit! Thank you for this recipe!

I’ve made the chicken nachos meal 4 times now. Plates licked clean, every time. I cook the chicken the night before so it takes less time to prepare for the next days dinner. It’s a big hit around here.Â
I made this tonight with shredded pork instead of chicken. I also added a (drained) can of black beans. Yummy!
