Recipes I’ve found for roasted pumpkin seeds — I’m dying to try them this fall, although I don’t know if I can carve that many pumpkins!

When I was little, carving the pumpkin was a BIG event at my house. My mom would lay newspaper and a big garbage bag out on the living room floor and I’d get to work, scooping out the pumpkin guts, designing my pumpkin, and carving it out — with help, of course! We also roasted up pumpkin seeds, a tradition I’m happy to carry on with my own daughter because they are SUPER delicious!

Today I wanted to share some of the yummy recipes I’ve found for roasted pumpkin seeds — ones I’m dying to try this year, although I have no idea if I’d be able to carve that many pumpkins… but I could try!
