As St. Patrick’s Day approaches many folks are on the prowl for last-minute recipes. This Lime Leprechaun Punch I spotted at Pocket Change Gourmet is perfect for a party with only three simple ingredients, lime sherbet, pineapple juice, and ginger ale.
One small goof that I made is seen in my last photograph.
I scooped the lime sherbet in too large of a size to easily fit into a punch glass. So from my mistake, I have learned to use a small to medium-size ice cream scoop for future punch projects.
St. Patrick’s Day Recipe: Lime Leprechaun Punch
Ingredients
- 1 container 2 quarts Lime Sherbet
- 1 46 oz can Pineapple Juice
- 1 2 liter bottle Ginger Ale
- optional garnish: lime wedges and cherries
Instructions
- Add Sherbet to bowl and/or glasses.
- Pour in Pineapple Juice until about 3/4 full.
- Fill with Ginger Ale.
- Garnish with lime wedge and cherry (optional).
