St. Patrick’s Day Recipe: Lime Leprechaun Punch
As St. Patrick’s Day approaches many folks are on prowl for last minute recipes. This Lime Leprechaun Punch I spotted at Pocket Change Gourmet is perfect for a party with only three simple ingredients, lime sherbet, pineapple juice and ginger ale.
One small goof that I made is seen in my last photograph. I scooped the lime sherbet in too large of a size to easily fit into a punch glass. So from my mistake, I have learned to use a small to medium size ice cream scoop for future punch projects.
Lime Leprechaun Punch
Ingredients:
1 container (2 quarts) Lime Sherbet
1 (46 oz) can Pineapple Juice
1 (2 liter) bottle Ginger Ale
optional garnish: lime wedges and cherries
Directions:
1. Add Sherbet to bowl and/or glasses.
2. Pour in Pineapple Juice until about 3/4 full.
3. Fill with Ginger Ale.
4. Garnish with lime wedge and cherry (optional).
