This Leftover Turkey Stuffin' Muffins recipe is a combination of leftover turkey stuffing and spinach that is easy to make.

Ingredients

  • 3 cups leftover stuffing
  • 1 cup chopped turkey
  • 1 cup fresh baby spinach leaves chopped
  • 4 eggs
  • 1/4 cup milk
  • Freshly ground pepper

Instructions 

  • Preheat oven to 350F. Coat a regular size muffin pan well with cooking spray.
  • In a large bowl, combine stuffing, turkey and spinach, stirring well. Add eggs, milk and pepper, mixing well. Divide stuffing mixture evenly among the 12 muffin cups, filling each about 1/2 to 3/4 full.
  • Bake 25 minutes or until golden brown. Let cool at least 5 to 10 minutes. Use a knife around the edges to loosen, if needed.
