No-Brainer Recipe: Easy Creamy Parmesan Tomatoes

Creamy Parmesan Tomatoes are a simple side dish consisting of roasted tomatoes topped with a creamy Parmesan spread. It is very customizable, just use whatever seasoning you are in the mood for, such as Italian, Cajun, or garlic. We used a blend from Penzeys called Fox Point that had a mix of salt, shallots, chives, garlic, onion and green peppercorns. Tasty and easy. Ready for the recipe?

Parmesan Tomatoes

Yield: 6-8 servings

Ingredients:

1/2 c. mayo
1/3 c. parmesan
1/2 tsp Penseys Fox Point spices
6-8 Campari tomatoes (regular tomatoes work too), cut in half

Directions:

1. In a small bowl, mix first 3 ingredients. Add a small spoonful of topping to each halved tomato and add to a prepared baking dish.

2. Bake at 350-f degrees until browned, about 15 minutes.
