Hot Rueben Dip Recipe
With St. Patrick's Day coming up in a bit, I thought a hot cheesy and corned beef Reuben dip would be perfect!
Ingredients
- 1 pound cooked corned beef diced
- 8 oz cream cheese - softened
- 1 cup Swiss cheese - shredded
- 1 cup crunchy sauerkraut - drained
- 1/2 cup sour cream
- 1/4 cup Thousand Island dressing
- 1/4 teaspoon pepper
- Optional- 1/4 teaspoon salt
- 1/2 cup Swiss cheese to garnish
- Parsley to garnish
- Mini rye bread rounds or crackers
Instructions
- Preheat oven to 350°. Grease a 8 inch cast iron skillet or 8 inch casserole dish and set aside.
- Add the diced corned beef and cream cheese to a large mixing bowl.
- Mix in the Swiss cheese, drained sauerkraut, sour cream, Thousand Island dressing and salt(optional) and pepper. Stir until well incorporated.
- Transfer to greased skillet/dish and bake for 30 minutes.
- After 30 minutes, sprinkle 1/2 cup Swiss cheese on top of dish and return to oven until cheese is melted (1-2 minutes).
- Serve warm with mini rye bread rounds or crackers.
