Oatmeal is one of those comforting breakfast dishes that reminds me of my childhood. Today, I wanted to share a delicious baked blueberry oatmeal recipe that is sweet, warm and just…perfect!

Baked Blueberry Oatmeal

Baked Blueberry Oatmeal


  • 1 3/4 cups old-fashioned oats
  • 1/2 cup light brown sugar
  • 3/4 cup skim milk
  • 3 tablespoons melted butter
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh blueberries


  1. Preheat oven to 350F.
  2. Combine oats, brown sugar, milk, butter, egg, baking powder, cinnamon, salt and vanilla, mixing well.
  3. Place oatmeal mixture in a lightly greased 8- x 8-inch metal baking dish. Bake in preheated oven 20 to 25 minutes or until edges are golden brown. Let cool 15 minutes before serving. Cut into squares or serve in bowls.
