Bacon Cucumber Pasta Salad Recipe
This cold Bacon Cucumber Pasta Salad recipe includes cucumber, bacon, green onions, ranch dressing, and macaroni.
Sometimes I dream of living in a place where I can eat outside every single day. Unfortunately, Oklahoma has weird weather that often gets in the way of my alfresco cravings, but when it’s possible, you’ll see me sipping my morning coffee, snacking on lunch, or eating dinner with my family on the back porch, or picnic-style in the backyard. I swear food tastes better outside — just don’t forget to light a citronella candle to keep the bugs away!

I’m always craving summery salads — and especially macaroni salad. Plus, with any macaroni salad, there’s the added bonus that they are SO EASY to make and they totally taste better the next day!

Bacon Cucumber Pasta Salad Recipe
Ingredients
- 12 ounce box of macaroni cooked & drained
- 1 cucumber chopped
- 1 pound bacon cooked & crumbled
- 1 bottle of ranch dressing
- 6-8 green onions chopped (for garnish)
Instructions
- Combine the first four ingredients in large glass bowl. Garnish with green onions!

I would use the Fiesta Salsa Hidden Valley on tacos in place of plain sour cream. Yum!

I will use Hidden Valley Original Ranch Roasted Garlic Dressing to make Garlic Chicken Salad Sandwiches.

I would use them on my baked potatoes with my sour cream to make a nice creamy topping!
I would use the Hidden Valley Ranch Avocado dressing to make some sort of taco salad!
I like the idea of using the various flavors in potato or macaroni salad, but I think the primary way I would use them, especially the Sweet Chile variety, is as a spread on sandwiches and burgers.
Nothing better than a hamburger made with the dressing mixed in before the grilling shared with corn grilled with old fashion Hidden Valley ranch dressing and a side of raw crudites dipped in greek yogurt mixed with complimentary Hidden Valley Avocado or Salsa dip mix. Make it a Hidden Valley, Hidden Taste meal.
