Sometimes I dream of living in a place where I can eat outside every single day. Unfortunately, Oklahoma has weird weather that often gets in the way of my al fresco cravings, but when it’s possible, you’ll see me sipping my morning coffee, snacking on lunch, or eating dinner with my family on the back porch, or picnic-style in the backyard. I swear food tastes better outside — just don’t forget to light a citronella candle to keep the bugs away!

Do you have any favorite summery dishes that you LOVE to make this time of year? Or perhaps a potluck must-have that your pals are always asking you about? I’m always craving summery salads — and especially macaroni salad. Plus, with any macaroni salad, there’s the added bonus that they are SO EASY to make and they totally taste better the next day!

Today I wanted to share a recipe that you can whip up quickly for a backyard dinner shindig and the leftovers will be perfect for the next day’s lunch. Take a peek below and try out this recipe for yourself! (Oh, and just in case you weren’t excited yet… there’s bacon involved. You’re welcome!)
