Breakfast Ham and Egg Cups Recipe
For this breakfast cup recipe, I’m using ham lunch meat and eggs! And it’s delicious and SO EASY for a quick breakfast.
I’ve mentioned before that this holiday season I’m trying out some new breakfast recipes to keep people out of my hair in the kitchen when I’m making the big meals. I’m hoping that if I can get the big meals made more easily, I’ll have more time to enjoy my guests. That is really what this time of year is all about, right?
For this breakfast cup recipe, I’m using ham lunch meat! And it’s delicious and SO EASY.

Here’s the recipe:
Breakfast Ham and Egg Cups Recipe
Ingredients
- 8 slices lunchmeat ham
- 4 tbsp + 1 oz shredded sharp cheddar cheese
- 1 green onion thinly sliced
- 8 eggs
- 1/8 tsp black pepper
Instructions
- Preheat the oven to 400 degrees. Spray 8 muffin cups with cooking spray.
- Place 1 slice of ham into each muffin cup. Sprinkle 1/2 tbsp of cheese and around 1/2 tbsp green onions into each cup.
- Crack one raw egg into each ham "cup." Sprinkle a bit of pepper onto each cup.
- Bake for 15 minutes or until eggs are done to your liking. Enjoy!
One of the great parts about this recipe is that I can use the ham for lunches as well, so it makes meal planning simple.

Hi Amy, easy and tasteful recipe. Congrats. Maybe try to use spanish or iberico ham and should really tasty. Congrats on your blog 🙂
