The Best Burritos For Summer!

Summer and burritos, burritos and summer. They go hand in hand and I’m pretty much craving both all year long. Whether you’re grilling them or wrapping them cold, using leftovers, seafood, beans, or rice — I’m pretty much game to try whatever burrito crosses my path.

So far, the best burrito I’ve ever eaten was at a little hole in the wall restaurant in San Jose and nothing has come even close to topping it — but I’m on the hunt! Maybe one of these will rock my world too!

Chipotle Shrimp Burritos via Foodie Crush

If you love seafood, I have a feeling you’re going to dig these spicy shrimp burritos! The recipe recommends cooking them in a cast iron pan — sounds good to me!

Vegan Chickpea Burritos via Sweet C’s Designs

Chickpeas! Yes! You don’t have to be a vegan or vegetarian to enjoy this meatless burrito recipe. I love the addition of red cabbage — delicious and beautiful!

Chicken and Broccoli Grilled Burritos via Taste and Tell

I never would have thought to rock out the broccoli in a burrito but this recipe might just have me convinced. Gotta try this! And I know my daughter would like it too!

Breakfast Burritos via Natasha’s Kitchen

You had me at, well, breakfast. I’m obsessed with breakfast burritos and I can’t wait to give this recipe a try! This looks so much fancier than the ones I slop together at home — they taste great, but they wouldn’t make Jamie Oliver proud by any means.

Crispy Black Bean and Rice Burritos via Gimme Delicious

I love the combination of corn and black beans in this grilled burrito recipe! The perfect blend with the sweetness of corn along with bell peppers and more. Yum!

Spinach and Bean Burrito Wrap via Skinny Ms.

I’m pretty much psyched about putting spinach in ANY recipe, so I’ll give it two thumbs up in a burrito! Hmm… writing this is making me really hungry. This was a terrible idea, ha!

Chicken Avocado Burritos via Oh My God Chocolate Desserts

A great idea for when you have some leftover chicken from the previous night’s dinner! Add avocado and cheese to the mix and you’re good to go.

Cheesy Beans and Rice Burritos via Alice and the Mock Turtle

This is an awesome recipe to make ahead. You can freeze them in tinfoil to reheat one at a time when you’re ready. The kids are out of school right now, but I bet these’d be great for packing in their lunch bags too!
